Born in Kobe, Hyogo Prefecture, Emi apprenticed at a famous Kobe restaurant after graduating high school. He then worked under the Meilleur Ouvrier de France chef at Auberge du Vieux Puits (3 Michelin stars, La Liste No. 9) in the Languedoc, southern France; and at Arpège in Paris (3 Michelin stars, the World’s Best Restaurants No. 8, La Liste No. 5). He worked at Porto Bar Knot in Kobe (awarded Michelin’s Bib Gourmand 3 consecutive years), before becoming chef at Espice in 2016.
